Solouva - Open Chardonnay

Solouva - Open ChardonnaySoloUva, the Franciacorta based winery known for its grape only method, has expanded into Oltrep Pavese with new vineyards dedicated to this project. Open follows the same philosophy that defines the estate: using only grape must for the second fermentation, with no added sucrose. The wine is made from Pinot Noir and Chardonnay grown on calcareous soils of the Oltrep hills, fermented with native yeasts and aged on the lees to develop subtle texture.

After gentle destemming and a controlled fermentation with pump-overs and délestage for balanced extraction
